Kilchoman Maury Cask Matured Release

As its first limited release of 2026, Kilchoman has now announced a world first: the first full maturation of a Kilchoman whisky in Maury wine casks.

Maury is a sweet fortified wine from the Roussillon region in southern France, produced mainly from Grenache Noir grapes. The production of this fortified wine is comparable to that of Port wine; apart from the different grape varieties used, the main difference is that in the AOC Maury, only 10 per cent Eau de vie may be added and the base wines must already have an alcohol content of at least 15 per cent. In the case of Port wine, the alcohol content of the base wine is not specified and up to 20 per cent brandy may be added.

With this bottling, Kilchoman continues its series of wine cask full-maturations, which began in 2014 and has so far seen three Port cask, two Madeira cask, three Sauternes cask, one Red Wine cask, one STR cask, and two Fino and PX sherry cask releases.

For this release, 19 Maury butts from 2021 were vatted and bottled at 50% abv. This yielded a total of approximately 15,000 bottles.

Kilchoman founder Anthony Wills wrote: “The Maury Cask Matured is a first ever release for us and something rarely seen on the market at all. These powerful fortified wine casks can be challenging to manage, but when you get them right, they can produce something really special.

We are known for our full maturation policy for many of our limited editions and this is another example of that, bringing through all those beautiful Maury flavours in a bold and balanced dram, not to mention the incredible crimson red hue to the whisky.”

As one might expect, the whisky’s flavour profile lies somewhere between Port and Madeira maturations. The casks have not only given it a lovely red colour, but also notes of dates, raisins and dark honey, which complement Kilchoman’s natural peat smoke and citrus freshness wonderfully.

The bottling is due to be available in Europe from the end of this week and will cost around £70 in the UK.

Participants at the Kilchoman tasting organised by Kilchomania.com at Fèis Ìle 2025, featuring Anthony Wills and Hans-Peter Neumann, were able to taste a cask sample of Maury Butt 1222/2021 there. The whisky, then just four years old, caused quite a stir and was one of the favourites of the evening, already very well matured for its relatively young age. No wonder Kilchoman has now released it at four and a half years old.
