Kilchoman STR & New Oak Single Cask 19/1042 for Ristorante Whiskeria Toilasor, Livigno

The restaurant and whisky shop Toilasor in Livigno, Italy, released this exclusive Kilchoman single cask bottling at the beginning of January 2026.

This is another STR Cask Matured / New Oak Finish bottling, of which almost a dozen had already been released in 2024 and 2025. However, this bottling is special in several ways. During his finishing experiment with new oak (we reported), Anthony Wills selected two different batches of casks: a series of 2018 STR casks that were decanted after five years in new oak and a series of 2019 STR casks that were decanted after only three and a half years. Many casks were then bottled with finishing periods of one and a half to two years, and in the summer of 2025, most of the remaining casks were re-racked into neutral casks because the influence of the wood had become too strong.

This bottling is special, firstly because it is one of only three 2019 casks that have been bottled. Five years of bourbon cask maturation and approximately two years of new oak finish for the 2018 casks produced the most balanced results, while the 2019 casks, with only three and a half years in bourbon casks and over two years in new oak, were significantly more woody. Secondly, this development was taken to the extreme here with a new oak finishing period of 31 months. According to Anthony Wills’ standards, this cask should also have been re-racked, but as the Port Single Cask Finish 927/2016 – Italian Cities: Rome has already shown, the Italian whisky market, or rather the Italian Kilchoman importer, seems to favour completely overloaded cask fillings with the darkest possible colour and extremely strong tannin notes.
