The Chinese Kilchoman importer Single Malt Club China (SMCC) released a series of seven single cask bottlings under the title The Birth of Kilchoman Story at the end of 2022. The concept of the series is to trace the individual steps in the creation of a Kilchoman whisky “from barley to bottle” using individual Kilchoman releases.

The almost 12 year old bourbon cask maturation listed here was number 3 in the series and addresses the issue of the conversion of starch into fermentable sugars.
